Menu Plan Monday

Here is my dinner menu plan for this week:

Monday: hamburgers, fruit, salad, potato salad

Tuesday: stacked vegetable quesadillas (Simply in Season, page 132) with salad

Wednesday: chicken-pineapple skillet (More-With-Less, page 182) with salad
(I have leftover pineapple from our Labor Day picnic and decided to use the leftover pineapple in this dish)

Thursday: fish, loaded baked potatoes, and steamed vegetables

Friday: farfalle with broccoli (Giada DeLaurentiis – Everyday Pasta, page 161) with salad
(I don’t think I have farfalle on hand, so I will probably use a different kind of pasta noodle. It didn’t seem frugal to buy farfalle when I have plenty of other kinds of pasta in my pantry.)

Saturday: scrambled eggs, fruit, salad or steamed veggies

Sunday: sandwiches or leftovers
