Gingerbread Waffles

I had planned to make Pumpkin Waffles for dinner this evening, but we have decided to go out to eat. So I mixed up Gingerbread Waffles last night – I just discovered the recipe and wanted to try it. My son and I had waffles for breakfast. I was going to leave the batter in the fridge and make fresh waffles whenever we wanted them…but I ended up making the whole batch of waffles and froze the ones we did not eat.

The waffles were pretty good, a little soft. I prefer crispy waffles. Perhaps they would have been crispier if I had used butter on the waffle iron instead of cooking spray. I may try butter next time to see if there is a difference.

Waffles are easy to make and freeze well. And they are inexpensive to make. Do you make your own waffles? What kinds do you make?
